No matter what time of year it is, there’s no denying that everyone can appreciate a good egg bake dish! They are SIMPLE yet TASTY and can be spread out throughout the week for a pre-made hearty breakfast, or they serve as an excellent dish for a gathering – of all occasions!

Simple Everything Bagel Egg Bake

This simple everything bagel egg bake recipe adopted from the Home Made Interest blog will even have those non-egg fans coming back for more since the addition of bagel pieces really brings in a toasted texture that balances out the egg portion. Even better, you can make this dish ahead of time letting it sit in the fridge overnight to soak up all the flavor before popping it into the oven.

SIMPLE EVERYTHING BAGEL EGG BAKE INGREDIENTS

  • 5 Everything bagels, cut into 1-inch pieces
  • 8 oz. bacon, cooked and chopped (healthier substitute: turkey bacon)
  • 2cups Gruyere cheese, shredded (Gouda is a good substitute if you can’t find Gruyere)
  • 8 oz. cream cheese, cut into 1-inch cubes (healthier substitute: low fat cream cheese as shown in recipe images)
  • 8 large eggs
  • 2 cups heavy cream (healthier substitute: fat free half and half as shown in recipe images)
  • 1/2 tsp salt (or garlic salt as shown in recipe images)
  • 1/4 tsp pepper
  • Chives (or green onion)

SIMPLE EVERYTHING BAGEL EGG BAKE INSTRUCTIONS

  1. Grease a 13×9 inch casserole dish.
  2. Add ½ of the everything bagel pieces to the casserole dish, sprinkle with ½ of the chopped bacon, then ½ of the shredded Gruyere cheese, followed by ½ of the cream cheese cubes.
  3. Repeat with another layer of the remaining everything bagel pieces, chopped bacon, shredded Gruyere, and cubed cream cheese.
  4. In a bowl combine all 8 eggs, 2 cups of heavy cream, salt, and pepper. Whisk until thoroughly combined.
  5. Pour the egg mixture over the bagels making sure to cover all of them.
  6. Tightly cover the casserole dish and place in the refrigerator overnight or for at least 4 hours.
  7. Once the ingredients have soaked up the egg mixture in the fridge for the recommended amount of time, preheat oven to 350 degrees F.
  8. Cover the bagel egg bake with aluminum foil and place in the oven to bake for 40-50 minutes. Then remove foil and continue to bake for 15-20 minutes.

Let cool for 10 minutes before serving. Garnish with chives and extra Trader Joe’s Everything But The Bagel seasoning if desired.
