Bacon Soft Pretzel Stuffing

Bacon and Soft Pretzel Stuffing

Of course, there’s those who are real sticklers for the traditional stuffing which is totally understandable considering it truly is a favorite Thanksgiving staple. In that case, feel free to include this as a smaller dish for those who are more adventurous to give it a try and spread the word. The nice part about this recipe is that it gives you the comforting goodness of the soft pretzel aspect along with the festive stuffing taste we all know and love. Plus, there’s plenty of crispy bacon sprinkled in giving it a hint of a delightful, smokey finish. Bottom line, it’s definitely worth giving a try and can’t hurt to include as a sizzling side kick to the turkey.

Servings – 6 to 8

Ingredients

  • 10 cups of pretzel rolls cut into cubes
  • 1 pound of crisp cooked bacon cut into ½ inch pieces
  • 1 medium-sized onion, chopped
  • 4 stalks of celery, chopped
  • Salt & pepper
  • 1 ½ cups chicken broth
  • ½ cup of a light beer
  • ¼ cup Dijon mustard
  • 2 tablespoons of honey
  • 2 large eggs
  • Nonstick cooking spray or butter for greasing the pan
  • ½ cup chopped fresh parsley
  • Dash of sage *optional (we added this to give it more of the traditional stuffing taste)

Instructions

  1. First step is to dry out the pretzel rolls
    1. Preheat the oven to 200 degrees
    2. Cut the pretzel rolls into 0.5 to 1-inch cubes
    3. Spread out the pretzel cubes in an even layer on a couple of baking pans
    4. Bake for 1 hour in total and flip halfway through
  2. While the pretzel cubes are baking, prepare the rest of the ingredients
    1. Fry the bacon on the stove until nice and crisp
    2. Drain ¼ cup of the bacon grease and set aside
    3. Add the chopped onion and celery to the same pan with the remaining bacon grease and cook over medium heat for about 5 minutes then season with salt and pepper to taste, set aside
    4. In a medium bowl, whisk together the chicken broth, beer, mustard, honey, eggs, and sage
    5. Remove the pretzel cubes from the oven and increase the temperature to 375 degrees
    6. Combine the pretzel cubes, bacon, onion + celery mixture, and fresh parsley in a greased 9×13 inch casserole dish
    7. Pour the broth mixture over the top and gently toss to even coat the contents
    8. Lastly, pour the reserved ¼ bacon grease over the top and bake for about 40 minutes until everything looks golden brown
  3. Top off with some homemade gravy and BAM – a little bit sweet plus rich and savory explosion of flavor!
